The URL for EBS is now http://www.ebsglobal.net/ and the "Cheese making" page seems to have been deleted (possibly a student project ?)
Try searching for "scotland cheese making" Lots of sites, mainly for modern cheese making, but one or two historical items as well. for instance: http://www.florilegium.org/files/FOOD/Cheese-Making-art.html includes a recipe from "Lady Castlehill's Receipt Book" from 1738

Searching for Coleman, Moore, Kallnung in London; Margulies, Remenyi in E. Europe; Ancestors of Hessie Stevenson-Coleman-Baxter (Ireland, 1861) and, of course, any other ancestors for my web-site.
