The Cornwall Online Census Project contains data from 1841, 1851, 1861 and 1891.
There is a clear parish-by-parish "table of contents" telling exactly which parishes have been transcribed:

The 1851 Census at St. Erth is available here.  There is no name search facility, so you will need to search each page separately.

B-B, don't forget the Lynher Parish lists (lynherparishes.co.uk).  They have been very helpful to me with many ancestors from the Linkinhorne area.  There are two other locales involved - St. Ive & South Hill.  RedFox
