Civil registration began in England in 1837, so unfortunately you won't be able to get a birth cert for James.
You can order BMD certs online at http://www.1837online.com
Free BMD http://freebmd.rootsweb.com is an incomplete searchable database from 1837- early 1900's. (James' marriage isn't listed here yet.) Ancestry have recently made the images of the BMD index available at http://www.ancestry.com/search/db.aspx?dbid=5963 - if you check through from 1856 to 1860 you should be able to find the GRO reference for the marriage, which means you can order it more cheaply!
Otherwise, you can order the marriage cert by post from Cheshire BMD at the link I gave you.
Try posting a separate request for a 1841 lookup for Charles and family - I don't have access to that census, but someone else might be able to help.
In the meantime, how about this from the IGI (available free at http://www.familysearch.org):
James Walker, son of Charles Walker and Elizabeth, b. 21 Nov 1831 and christened 18 May 1834, Gorton, Lancs.
Thomas Walker, son of Charles Walker and Elizabeth, christened 18 May 1834, Gorton, Lancs.
Joseph Walker, son of Charles Walker and Elizabeth, christened 4 Sep 1836, Gorton, Lancs.
No maiden name, though!

This might help with marriage of Charles and Elizabeth, as I have extracted all Walkers from Gorton, Denton, etc., and some marriages for Charles' from Manchester Cathedral.
Charles Walker Batchelor, Labourer, of Manchester (parish included Gorton then) to Elizabeth Waver. Both X's, Witness X of Edward Baker.
Charles Walker Batchelor, Weaver of Manchester to Elizabeth Clough. Both X's. Witness Jane or Tom Eccles who signed.
I cannot find a baptism of this Charles in Gorton, so he may have come from further west and have been baptised in a church such as Birch-in-Rusholme, etc., the only Charles near his age was the son of Samuel and Nancy, Butcher, and Charles was a butcher and remained in Denton with his family.
I would opt for the Charles Labourer myself as the Charles on the Census was an Ag.Lab and not a weaver.
Hope this helps. Cannot see a burial for Elizabeth, but again this could be in another church.
