Hunts Marriage Index has an 1836 marriage in Lt Stukeley, which is where they appear to have been living in 1841, between John Wimpress of Ellington and Elizabeth Saunders.
Unfortunately I believe the only place you can get Ellington baptisms is at Huntingdon Records Office (if indeed he was born at Ellington rather than St Ives)
The BVRI has the following christenings at Witton
Mary Ann Wimpress 2 Dec 1846 Parents John & Elizabeth
George Wimpress 19 Apr 1872 Parents John & Elizabeth (this has a date of 1849 in brackets in the index which I don't understand unless there's a birth date shown in the register which hasn't been included in the detail section - but the 1851 census does show a George age 2)
