If someone was "born on the ocean" January 4, 1837, would there be some sort of birth registration and where would it be if there was one available? Or would they just be on the passenger list and that's it?
They original starting point was Ireland and their final destination was Guelph, Ontario.
His name is Bartholomew O'Connor and his parents were Daniel O'Connor and Ellen McGillicuddy.

There would not be any birth registration as that is too early. The birth of the child would be noted on the passenger list, either beside the parent's names or on the last page of the manifest. However.... before 1865 it was not required to archive lists of passengers arriving in Canada.
Some lists do survive, many do not. Since the year is 1837, you might want to search here:
