Checked for their marriage in 1812 to see if there was more info but it was not listed at Marston Moretaine. Did they marry elsewhere?

Hi Trisha
Just had a quick look at the IGI.
There is a Joseph Virgin = Sarah Kirby 30.4.1812 Maulden, both stated as being of Maulden.
There is also another entry, same date, same names, submitted by an individual. This says they were of Southill although this entry doesn't exactly say where they were married!
At Maulden there is a Sarah Curby dau of Joseph & Anne Curby c 7.4.1786.
Could this be the Sarah you are looking for?
My local library has the printed parish registers up to 1812 for Maulden so, if you are not in a rush, I could check them out sometime if you like. Just post the word.
Have you found Joseph & Sarah on the census at all? Is that where the Marston Moretaine information comes from?

There are no Virgins at all in Southill PR up to 1812, and although there are some Kirby/Curby entries these are all pre-1750
