Hi Matilda and welcome to Rootschat!
Did you know about the Surname Interest Table http://surname.rootschat.com/ If you add your surnames into the table you may be lucky and come up with some matches. I have found a few through it!
Best of luck

Matilda,
How far back are you with your SAUNDERS. I have hit an Agnes SANDERS/SAUNDERS b. 1758 daughter of William SANDERS/SAUNDERS and Grace m. 1745 in Poltimore. Agnes married John SYMMS/SIMMS and died in 1828 in Broadclyst. Are your SAUNDERS from this region?

Matilda,
Here's some details I found quickly;
1881 Census - 12 Pugsleys Court, Barnstaple, Devon RG11/2243 William SCOINS b. 1823 in Chittlehampton, Devon - Labourer Caroline SCOINS b. 1831 in Middlesex James SCOINS b. 1858 in Chittlehampton - Labourer Mary A SCOINS b. 1862 in Chittlehampton - Hawker of Fish Rose SCOINS b. 1875 in Barnstaple (granddaughter)
1881 Census - 25 Bodens Row, Barnstaple, Devon RG11/2244 Henry SAUNDERS b. 1857 in Taunton, Somerset - Licenced Hawker Rachel SAUNDERS b. 1858 in Chittlehampton, Devon Mary A SAUNDERS b. 1876 in Barnstaple William H SAUNDERS b. 1877 in Barnstaple John SAUNDERS b. 1881 in Barnstaple
Birth - William Henry SAUNDERS Jun qtr 1877 Barnstaple Vol 5b Pg 467
1871 Census - Green Lane, Barnstaple, Devon RG10/2183 William SCOINS b. 1817 in Chittlehampton, Devon - Labourer Caroline SCOINS b. 1831 in London James SCOINS b. 1855 in Chittlehampton - Labourer Rachel SCOINS b. 1856 in Chittlehampton Mary A SCOINS b. 1862 in Chittlehampton
1861 Census - Frog Street Chittlehampton, Devon RG9/1487 William SCOINS b. 1811 in Chittlehampton, Devon - Labourer Caroline SCOINS b. 1821 in London - Stay Maker James SCOINS b. 1854 in Chittlehampton Rachel SCOINS b. 1858 in Chittlehampton William Gilbert SCOINS b. 1860 in Chittlehampton Birth - William Gilbert SCOINS Mar qtr 1860 South Molton Vol 5b Pg 471
1851 Census - Chittlehampton Village, Devon HO107/1891 William SCOINS b. 1817 in Chittlehampton, Devon - Labourer Catherine SCOINS b. 1823 in London (Catherine is obviously an error) Margaret WILLIAMS b. 1845 in London (listed as daughter despite difference in surname)
Marriage - William Maine SCOINS m. Caroline WILLIAMS Dec qtr 1849 South Molton Vol 10 Pg 309
I have not investigated whether Caroline was previously married, or whether she bore Margaret out of wedlock? What a frustrating family, some family members seem to change their year of birth like a change of clothes (they don't appear to be transcribing errors).
Regards,
FishMan

Hi Louise, well I know very little about my Sanders/Saunders family, they don't appear to be on any of the census returns. Elizabeth Sanders/Saunders (from one of her childrens birth certs, very difficult to read) was born c1831 in ?Petrockstow, Devon. She was my ggg Grandmother, she married William Bissett in c1858 in presumably Torrington. I don't know who her parents were, but she had a sister called Mary c1833 ?Petrockstow. I see that your Saunders were a travelling family, could be possible, if they are linked, that this is why I can't find mine on any of the census' until she is married to William. My Scoins are also connected to the Bissett's, Elizabeth and Williams Bissett's son George married an Annie Scoins c1867 Bideford, Devon. Her parents were George c1833 Parkham, Devon and an Honor Wade c1835 Bradworthy, Devon. Her siblings were Mary Jane c1856, Elizabeth c1858, Matilda c1862 all born Parkham and John c1869 Bideford. George's parents were John c1797 Parkham and Ann Wakely c1796 Stealton, Cornwall. His siblings were Reuben c1836 and Elizabeth c1838 both born Parkham. Reuben married an Ellen ? c1849 Hartland, Devon, they had 6 children, William c1870, John c1872, Fredrick c1875 all born Northam, Devon, Emma Jane c1876 born Littleham, Devon, Matilda c1878 born Bideford and Florence c1880 born Littleham.
Hope this helps
Regards Kate.
