Charles and family show in both the 1841 and 1851 Census on FreeCen at http://www.freecen.org.uk/cgi/search.pl. From the 1851 Census entry which is more accurate in terms of ages and also gives specific birth places:
Charles b. Watten c. 1800 Mary b. Watten c. 1796
Have you tried searching for their death certs. on Scotlands People? If they died after 1855 and the start of official registration in Scotland, you should be able to confirm their parents' names from these certs.

Hi Allymac
I searched this morning on FreeCen for the Charles Snr. who is a likely father to your Charles. Caithness is a brilliant County to search for on FreeCen as so much work has been done by the volunteers for this County.
I noticed that in the 1841 FreeCen there was a likely Charles Snr., a farmer also, who is living in North Watten - the same address that your Charles and family are living in 1851. He looks to be a widower and living with children/grandchildren.
Good luck in NRH next month and hope you find everything you are looking for!
