Sorry but I can't help with the location of St Ervan in relation to Bodman. Maybe best to start another post and hopefully someone who knows the area will be more help. Genuki is usually very helpful but I had no luck on this occasion.
Can't see a marriage for John Snell & Ann just prior to the birth of Elizabeth Snell but there is a baptism:
Edwin Saunders Snell, 25 December 1836, St Ervan but mother is Jane, no father listed. I wonder if they had older children and Edwin (on 1841) is actually their grandson.
Will have a look for earlier marriages and see what shows up.

I find this simple little map very helpful in seeing the layout of the parishes.

Of course there are many more more complex maps about but the simplicity of this one makes it easy to see just where the parishes are situated.
Sorry I haven't come up with much else. There is a baptism in St Winnow possibly Edwin
SNELL Edwin Henry 19 Jun 1836 St Winnow Parents John and Anne
and the only marriage I have found so far is in Kenwyn and does not list either as not of the parish so not confident with this one

These entries would yield a little more information in there entirety therefore I would suggest you contact the relevent OPC's and see if they can tell you any more.

Baptisms will list fathers Occupation and possibly further on where they were residing. Marriages at this time will not list Fathers but it will state if they were from another parish and witnesses may help. If the entries Sheila has found along with these all connect it involves a few possible parishes of interest. Of course as it involves a few parishes so these entries may not connect.
Cornwall is a very good county for research. So much information is available. So many parish records have been transcribed and most of the census is available free.

Another thought is where in Australia did the parents die. If you are talking the Eastern States those certificates should provide a lot of information.  Just wondering you mention young Johns Death Cert Death Cert listing Bodmin as POB so guessing you are talking eastern states. Does it not list his mother's maiden name?

Thank you very much Sheila and Kris for what you have done, and are doing. It is very much appreciated and it is very good of you. 
And I can hardly wait to get "stuck in" to the sites that Kris has mentioned !  I have another relative from Cornwall as well, so this will be doubly helpful !
Actually John Snr died 23 Jan 1863 Mt Barker Springs South Australia, as did Ann on 28 May 1870 and Elizabeth (HARPER) 31 Aug 1910. John Jnr died 9 Jun 1918 in the Royal Adelaide Hospital - and his Death Certificate says Birthplace not known, England, and it is actually Elizabeth's which states Birthplace as Bodman Cornwall. (But I did not consider it made any actual difference. I have tried to obtain the Hospital records, but have been told they are still confidential.) Susan was married twice, but I have not been able to locate her death.

Hi, everyone.
"Our" John SNELL, the subject above, from Cornwall, town unknown, died in South Australia 9 Jun 1918 age 84. (His older sister Elizabeth is recorded here as born in Bodmin.) 
For what it is worth, there is another John SNELL, this time from Chacewater in Cornwall, who also died in South Australia, 20 Mar 1914 age 80.
