It depends upon which time period

Pre 1930 adoption as we know today did not exist. many adoptions were private or "in family" and there are no records. Although some charitable institutions did work in those areas  their records are patchy.

After 1930 the situation although recorded is different and this link to information at the GROS in Edinburgh will explain it.

my uncle was born in 1918 he stayed with his birth mother untill he was two years old but as my cousin say's she had to get rid of him before her husband came back from the war because it wasn't his baby, he went to a lovely  Irish couple, he took their name (Nelis)
we dont know if it was a legal adoption or if they just raised him

If the adoption took place around 1920 although perfectly legal it would not  have been an adoption as we understand it today. The adoption could have been arranged privately or through family or church with few if any records being maintained.

"modern" adoption through the now recognised official channels began in 1927 in England and 1930 in Scotland.

If he remained in Scotland his birth record may have details (such as a change of name) and give you possible pointers as to which path your research should take you.
