If you have her marriage certificate it will be easier to find her parents as you will know her father's name.
I would have thought it easier to work backwards than jump 20-30 years, it does help to confirm whether you have the right entry or not and what year to start searching for her under her maiden as opposed to her married name. Lets try from 1871

Hi Tinkerbell I have found a Catherine Gray married to a Thomas in the 1841 and 1851 censuses which may be your lady. Does not help with parents though! Do you know when she married? I can post the details I have found if you think she could have married prior to 1841. Barbara

I've changed her occupation in the 1871 entry - it should be Grocer.

This property seems to be housing many families, some names are Wery, and Salter, but the Weeks seem to be in the same household, you never know whether you might find them related at some later stage. 1841 Sea Street, Newport Eliza Weeks 32 Y Emma 13 Y Charles 9 Y Edwin 7 Y Frank 5 Y Walter 1 month Y Thomas Gray 36 Painter J Y Catherine 28 Y Jane 6 Y Thomas 3 Y George 8 months Y HO107; Piece 407; Book: 2; Folio: 102; Page: 25

Catherine Tarrant married Thomas Gray 26 December 1830 Saint Marys, Portsea, Hampshire
It's worth checking the original register as you never know whether it may give any additional information.
