You don't say how old you believe Joshua is in 1841 but i've had a look for you and this is all I found:

Class: HO107; Piece 758; Book: 6; Civil Parish: Diss; County: Norfolk; Enumeration District: 14; Folio: 14; Page: 20

Joshua Cook 75 Living by independent means Born in County
Mary Cook 75 Born in County
