It certainly says Erskine for Janet ~ no idea why We have the marriage details in 1856, the IGI birth entries with HASTINGS also, the 1861/71 census entries which tie up with IGI children. You could check Janet's death cert. to see what it shows for her maiden name or also marriage certs. for other children/siblings to Agnes. There is no death entry showing for a Janet Erskine/Le*per but there is one for a Janet with Hasting* for other surname (I haven't narrowed down the search fields for the entry, but there is only one record showing).
This is the only entry I can see so far on the 1851 Census, with the names we have so far and a Boness birth place for a Janet Hastings:
Agnes Hastings 55, grocer, b. Linlithgow Alexander Hastings 31, son, Agricultural Labourer & Forester, b. Linlithgow Janet Hastings 33, daughter, dressmaker, b. Boness Monica

I found Arthur and Agnes last night in 1881 He was recorded as first name Fraser (as he was in 1891 in England):
Fraser Johnston 27, b. England Agnes Johnston 22, b. Linlithgow Andrew Johnston 5, b. Linlithgow
Address: No 23 So St James St, Edinburgh St Cuthberts
And also a possible entry for father Andrew in 1891:
Andrew Johnstone, 64, shoemaker, inmate, b. Dumfries Address: Moorheads Hospital, Dumfries
The index does not show marital status, so cannot say whether he shows as married/widower. You would have to look at the original image to establish this.

Thomas Hair, wife Margaret and 1yr old daughter Janet were in Dumfries for the 1851 census (at Irish Street East Side, Dumfries) and look to have moved to Newcastle upon Tyne after this date where their other children were born there.
It's likely that 1851 entry I found for an Andrew Johnstone in Newcastle upon Tyne was the right Andrew and Thomas and family followed after. Certainly Margaret Hair joined husband at some point after the 1851 census before the birth of Arthur in 1854.
