I don't suppose you have an ideas of his mother's name or other siblings?

He is not noted as 'deceased' so I presume James was alive in June 1852. No you can't take that for granted - if he wasn't asked then he wouldn't have answered.
That was the only Charles Wilson I saw in Canterbury except one other, aged 4 whose father was John a carpenter.
Which censuses do you have them on? and what date was his marriage and where?

Checking the census the other way - ie those James living in Canterbury, there is only one who is a possible but there is no Charles at home and at that age, and with other children at home I would have expected him to be there.

As you have a middle name I can only suggest that you look for his baptism in the churches of the area.
Unfortunately I don't see an entry for him on the IGI. Have you checked the local FHS to see what Parish Registers they have available? they may well have more transcribed than have been filmed by the LDS.

I thought that might have been the entry in 1861 and the only one I could really consider in 1851 might be the one working as a confectioner's assistant for Isabella Elie? at 10 Oxford Street, All Souls, Marylebone, Middlesex. He's 21 and gives his birthplaces as Kent Greenwich. It's possible that he wasn't at home when the enumerator took the details and somebody else took a guess?

Nice that your so interested and so helpful. We try 
Good work following the Greenwich one through, that might be your only option left to discount each Charles that you find until maybe you are left with just the one.
Don't ignore any that might be married either, just because his marriage certificate to Elizabeth didn't say he was a widower doesn't mean that he wasn't one. I've come across an instance where a widow has claimed to be a spinster - maybe she wasn't asked? and also a marriage where the man claimed to be a widower but there is absolutely no evidence that he was married previously, this could be an error.
