Hi Debz ... 
Are you still looking for James and have you received any info from Somerset board?
I cannot find him in 1881 ...what is the reference so I can have a look at POB .
I have had a look for him ... this one in 1871 looks interesting .... right DOB and County (wrong town)
1871: North Barracks, Deal, Kent James COOK, private R M L I, unmarried b Crumpton Somerset
Debz ...who was his dad married to ...I cannot find James in 1861... surely he would still be with his parents ...

here is Giles Griffiths Cook; birth Dec 1860 Williton , Somerset
if you ordered the birth cert , we may find his nun's maiden name
I have found this ...although not sure:

Jane COOKE wid 60 and her daughter fanny COOKE 17, unm , servant are lodging with the Cridland and family with other lodgers (one from Dunster). They are in Carhampton, Williton, Somerset
I hope we have the right family ...

I see in 1891 he was also a Private with R M L I , so I think we definitely have him in 1871 in Deal Kent! have you seen this link :

What did James Cook(e) die of ...do you have his death cert? did he die here or overseas ? Do you have his naval record?
So we have him in 1861/71/91 , he dies in 1893...so we are missing 1881...we look further ....

on that site I posted for the RMLI, they have the 1881 census list of the privates in Chattham barracks , kent ...I cannot see James Cook on it .... maybe you should recheck LOL

he is not around in 1881 ...maybe you could post on armed forces boards and they would be able to tell you what was happening then and where he could possibly be ... you never know , one of them may find his record jacket ...
