Yes, that christening does tie in with the miltary records you found on William Griffiths, also the fact that William's dad may possibly be GILES... Jane Griffiths d/o William and Thomas Cooke named one of their children Giles Griffiths Cooke. 
Your ideas on Jane being born near or on Fort Pitt (Forepeck sic ) ...is bril.... we just need to find her in 1841.

Hi all
There is a Giles Griffiths born c. 1796 living in Shepton Mallet, Somerset with wife Martha. In 1851 he is showing as a grocer and provisions factor (can't make out his occupation in 1841).
His birth place is Withycombe, Somerset, so maybe a brother to the William found by Deb?

Hi all; I'm a relative of Richard Griffiths (who was Gile's older brother) and funnily enough have just visited Withycombe. Parents Jonathon Griffiths (a carpenter) and Ann Tompkins lived in Rattle Row in a cottage he converted himself. Sadly no longer there. Pub burnt down too (100 years ago) and grandma Hannah died of smallpox! Otherwise it's a lovely place. Have lots of gossip about ensuing generations. Bit stuck as to who Richard and Hannah's parents were...probably John and Alice from Carhampton...then it all goes very cold.
