Help Norfolk Holland link 1850s

Hi

Can anyone suggest why a general labourer with two children born 1850, and1851, would travel to Holland (Amsterdam), have a child born in Amsterdam in 1853, then family return to Norfolk.  Huh By the 1861 Census, the family, without the husband, (dead or stayed in Holland?) were living in the Guiltcross Workhouse.

Any help appreciated
