I'm looking for a birthplace and parents of Edmund PROUT, about 1815, someplace in Cornwall. He married Mary VENNING in 1839 in Stratton and was in Launcells for the 1841 census. The family came to Canada about 1849.
Edmund may have had a brother, William PROUT, who was married to Mary VANSTONE. They appear in the 1841 census in Kilkhampton, Cornwall, on Commercial Street, along with children William, 7, Fanny, 5, Elizabeth, 3, and Mary, 6 months. This couple also came to Canada, but moved on to the United States.

I have had a bit of a look about and I am sorry to say I can't find a baptism listed for Edmund. I had a look for marriages in the 3 parishes you mention hoping to spot some likely parents. I only find 1 (1 Jan 1784 Launcells) The IGI lists some births to this couple - William PROUT and Margaret CORNISH but last listed is 1803 so 1815 is probably pushing it a little. I also see one in Poughill nearby in 1796 (William PROUT of Stratton = Sarah KEYTE 11 Sep 1796. - a few births on the IGI also, again last listed 1802) IGI Coverage for Stratton ends 1805, Launcells 1804, so IGI can not be of help for these two parishes in this era.
I do note that in 1841 William aged 30 lists as not born in Cornwall. As we are very close to Devon there may be some events listed over the border. 
Now William married pre civil registration so his marriage no help as to father, but Edmond PROUT = Mary VENNING Mar 1/4 1839 Stratton 9 305 - this is after civil registration therefore his father should be listed on the cert, and purchasing that cert will be a good place to start. It is a pity they did not remain in England until after the 1851 census to give us a POB

I'm searching for information on Samuel Vanstone. He was born in April 1829 in Torquay, Devon, England and died in 1874 in Darlington County, Ontario, Canada.
He married Dorothy Venning on May 24, 1830 in Devon.
I'm looking for his parents and ancestors.

Samuel's father was William, according to the marriage record:
Marriage: GRO, England. 1851, at Clovelly, parish of Clovelly, Devon, March 27, Samuel Vanstone, 22, bachelor, farm servant, residence Burnston, s/o William Vanstone, labourer; Dorothy Vinning, 21, spinster, of East Dyke, d/o William Vinning, labourer. Signed with X's. Witneses John Darnell and Ann Short. by Henry Dalton. Bideford district.
My great-grandmother was Dorothy's sister. Care to share information?
