The only Bickerstaffs in Ayrshire having children around that time and showing up in the OPRs (IGI and SP) are
Hugh Bickerstaff and Helen/Ellinor Roger(s), Girvan

Thomas is a bit younger than you stated but not too far out.

There is a Thomas Bickerstaff still showing on the 1841 and 1851 in Ayrshire but he's slightly younger - 20-24 in 1841 and 33 in 1833.
His eldest son is a Hugh

added - showing on IGI (patron submission) as dying circa 1875 with Parents hugh and Ellinor but not coming up on SP - only 1 dying Haddington, 1880 
So he's still a possible - just

When I was searching in Scotland, I found quite a few Bickerstaffs born Ireland. I'm just thinking that maybe he might have been born there also and then come over to Ayrshire as a very young child. This would have been the first place that he remembered.
He and Ann are on the 1851 census at HO107/2058 Folio 904 Page 11 Birmingham, St George

marhat, Where did you get information that Thomas was born in Ayrshire?
I note that there are some (I would say extremely unreliable) LDS submissions in the IGI as follows:
Thomas BICKERSTAFF b 1805 Scotland, m Ann 1830 Birmingham Warwick
Thomas BICKERSTAFF b about 1806 Ayr Scotland, d 1890 (! - I note that Ann was a widow in 1881 and possibly/probably earlier)
Unless you have found mention of Ayr elsewhere, it would be very unsafe to rely on the above submission.
Incidentally, are you sure that the 1828 marriage is the correct marriage? I guess to ensure that this is the case, you would need to get a birth certificate for a child born after statutory registration began (David? - presumably David BICKERSTAFF, birth, Jun qtr 1846, Birmingham, Volume 16, Page 288) as that should show Ann's maiden surname.
And we really need the answers to the following questions:
1. In which censuses have you found Thomas?
2. What is his birthplace in those censuses?

I've had a bit more of a search.
Thomas seems to be recorded as born in the county (i.e. Warwickshire!) in the 1841 (recorded as BIGERSTAFFE), and born in Scotland (no place specified) in the 1851. Have you found him in 1861?
I note two deaths of persons named Thomas BICKERSTAFF in Warwickshire (both in Aston district) between 1851 and 1861 - Thomas d Sep qtr 1856, and Thomas d Dec qtr 1858; perhaps one of these is your Thomas?
Thomas's wife Ann is perhaps the Ann BICKERSTAFF who died Mar qtr 1887 age 78 (a bit young) Birmingham?
Their children seem to be:
*Sarah b 1823, bap 1827 i.e. before the 1828 wedding (if it's the right marriage). Thomas, if age in 1851 is correct, would have been quite young at Sarah's birth i.e. ca 17.
Sarah probably married William CASH 1850
*Rebecca b 1829, bap 1835.
Sarah possibly married Michael CASH 1847
*Thomas b ca 1833.
Thomas possibly married Jane LUCAS 1854
*William b ca 1835
Still unmarried in 1881
*Isaac b ca 1837
Married a Harriet - haven't found marriage.
*Ann Maria b ca 1839
Ann Maria probably married Henry CASH 1873
*David b 1846
David probably married Mary Ann ALLSOP 1868
There seems to be difficulty with both Ann snr and Ann jnr in 1861.
As MonicaLesL said on the other thread, Ann jnr is probably the "wife" (i.e. it should be sister) with William and his brother David.
I'm wondering whether Ann snr might be (wrong name and too old) the following:
Sarah BICKERSTAFF, visitor, widow, 65, b Birmingham in the household of Michael & Rebecca (BICKERSTAFF) CASH?
Have you checked out the OPR for the 1828 marriage in case there are any further clues?
