Think in 1861 that William senior's age is 28 with a line through it! (I see you've edited it from 68 Cathy!)
Here's the 1881 Wales census info:
RG11/5283 fol.17 p.28 Llandaff, Cardiff, William & Elizabeth living with the Williams and Baker families, please ask for full details if you can't find them

RG10/2430 fol.12 p.15 5 The Mint, Frome HEARLE Esther head wid 39 Charwoman Gloucester Kingswood Harriet dau s 16 Cloth Worker Somerset Frome George son 14 Errand Boy " " Elizabeth dau 12 Servant " " Ellen dau 10 Scholar " " Albert son 5 " " "
wonder if William was already in Wales, can't see him....

For census, I use ancestry and findmypast and a couple of others, if I can't find things on one they'll often turn up on another. If I don't find them with full details, I search with just first name and birthplace or date of birth, or just surname, some sites are better than others with variations......
The one written as Earle was indexed Earle on ancestry but Garle on findmypast, and if there's an unusual first name in the family it's better to search that than (say) John Smith - found it by looking for Est* for Ester/Esther
Having said all that, there are still quite a few of my own that I can't find, sometimes they're mis-indexed, mis-transcribed, or just missing..........
