I believe it's to do with printing, a couple of definitions found:

someone who makes stereotype plates, or works in a stereotype foundry.

A person who creates a new plate for printing by molding or copying another printing surface.

Stereotypers were printers using what was called the "hot metal" process of printing.

so its not a person then who sits there and thinks a typical ........ should look / speak / act like ...........
