I think it came from the place name:

I'm trying to finda website for you but it must have been the town/settlement of Samuel!

dating back to 1650 they have been in many parts of East Lothian , especially around the Haddington and Prestonpans areas. Mostly Farm workers , which makes me wonder if a Samuel lived in the hamlet or possibly a number of them which is maybe why it became known as Samuel town ? haha just a wild guess but you never know !
