The only way to know with a degree of certainty - depending on the informant is by the names on her death entry. You mention the '41 census - do you have her on later ones? As you're probably aware ages on the '41 census were meant to be rounded down - so we could be looking for a birth just before 1800.
Also naming patterns of her children can be quite helpful.
To avoid others going over the same ground what were the names of John Grays parents?

Looks as though the following children born to this couple - from the IGI

and ? twins or christened on the same day
Malcom Gray ch. 17 June 1843 Duncan Gray ch. 17 June 1843
If 'conventional' naming pattern used you'd have been looking for a Robert and Anne as Janets parents - but not written in tablets of stone :O) (A death entry after 1855 is what's needed for Janet ).
** Just back off the IGI again - no birth of a female child to a Robert Geddes and an Ann/e in the correct timeframe.
(Have tried both the IGI and SP and cannot find a Janet Geddes born to Alexander Geddes and Isobel Carle (who married in 1799) - only 2 male children. John b. 23 Jan 1802 and Alexander, b 19 June 1806 - both Longside Parish..

Searched for a death for a Janet Gray - other name Geddes - between 1855 and 1900 - no joy - used a variety of combinations of christian and surnames.
Eventually - there is a death in 1885 to a Janet Gray -other name 'Geddie' - aged 85 born 1800 =/- 5 years - died Longside Aberdeen (GROS data 218/00 0043). (I've 1 credit left on SP and our house extension is bleeding momey). Good chance this is her? If she's looked up will provide her parents.
