I believe I have them on the 1900 census in Wingville, Baker, Oregon. A nice thing about the 1900 census is they give month and year of birth, and this nice enumerator looks like he actually threw in the real date of birth also.  It is a little illegible, so I'll do my bast translating.
Thomas Shaw, b. Sept 30 1841, age 68, b. Scotland, parents born Scotland, farmer, rents land
Hellen, wife, b. April 29, 1847, age 67 (just what it says  ), 10 children, 10 living, b. Scotland, parents born Scotland
Hannah, dau, b. Mar 9, 1882, 15, b. Oregon, parents b. Scotland, at school
Lena C, dau, I can't really read her birth info but it looks like she is 10
Robert, son, Mar 9 1891, 9
Lena might be January. I don't know if I have interpreted the parents ages right, as I would be surprised if Hellen had a child at 50 something. There also appears to be some immigration year, but I can't really read that either. I did find son Thomas living N. Powder, Union, Ore, but you seem to have all of that info. Let me know if you want it. And I will have a look in 1910.

OK, a bit more.
I found a death for a Thomas Shaw in Union on 24 Jan 1904. The cert number is 204.
I have found Helen in Union, Oregon in 1910 with Stanley R Shaw. Helen is head of house, here her age is 59. She had 10 children, 7 living. She has her own income and it looks like she owns her property. Stanley (I assume Robert) is 16. He is a farm laborer working out.
There is a Helen Shaw who died in Union Dec 30, 1928, cert number 228.
I can't seem to find Helen in the 1920 census, though.
