Lost in 1841, 1851 & 1861

I'm looking for early census entries for John Bunker (born c.1837).

John lived in Derbyshire, England from at least 1869 onwards to his death.  His father's name was Richard, a shoemaker, and his place of birth was given as "Scotland", "Fort George, Inverness" or "Fort George, Scotland" on the later census.

Can anyone find him in those early years?

Thanks.

New info:

On the 1911 census John's occupation is given as "Army Pensioner" so could that explain why he was missing before 1871?
