Landowners - Glenshiel also migration

I am researching a McDonald family from the parish of Glenshiel (they lived at Ratagan in 1841, and left the country in 1849). Can someone advise me how I can find out more about a particular family in a parish, were there records such as e.g. rent books kept by the landholders, and if so, how do I find out who owned the land, and where such records are kept now.

Also are there any records still available on emigration - I have the immigration records to Australia, but would be interested in any documents kept on the Scottish side - how where the sailings advertised? Posters, newspapers, word of mouth?

Any help or tips are most welcome. Thank you.
