This could be something or nothing, by chance I spotted the following.
George LOVELL Head birth Q1 1846, Portsea Island (Portsmouth) (not far from S'ton)
In 1851 George is with parents, Thomas & Rebecca L, as a 5 year old in Portsmouth.
Extracted marriage found on IGI Thomas Head to Rebecca Lovell Dunn, 29/6/1828, Botley, Hampshire.
This same George Lovell Head has a death registration Q3 1872 age 27, Dartford, Kent (2a 208). Could this be the father of Johanna? It appears that he died before her birth but it's possible her mother was pregnant at the time of his death...I know it's a long shot but worth keeping in mind,

I have had a reply from Dawn which states:

From what parish admitted: St Paul's
Date of Admission: Aug 10
Orphan: (blank)
Deserted: (blank)
Other: 1
Illegitmate: (blank)
Name and address of nearest relative: Father, a labourer
Date of discharge: (blank)
How discharged: (blank)
this puts her birth date as 1870
If this is her it would mean that she put her age back by 9 years!!
Unfortunately no new information. Not sure what to do next!!

Hi Jane,
yes I have her death certificate. Information taken directly from this: she died in W. Australia in 1943 aged 64, born in Hastings England, resided in W. Aust about 46 years. Parents George Head, deceased, contractor and Elizabeth Nicols deceased. This causes more confusion as this put her year of arrival in Australia as 1897 aged 18!! Slowly going mad – cheers - Jen

My fingers are crossed!
I think I'm thwarted with the George Lovell as I found a marriage for him Q3 1868, Alderbury, Wilts, so might not be the George we seek although it's odd he dies in Dartford 
Her age at death would have been given by a relative so very likely they knew her age by the information she gave throughout her life so not reliable. Her age upon arrival in Oz puts her dob about 1879 (that all from the death information) so she might have ammended her dob. Jen, might be worth having a look-see to find another Johanna Head arriving in Oz in 1897. If you can't, by process of elimination it must be her arriving as a 20 year old in 1894.
