The marriage of James and Grace was actually in 1802 (from the IGI).
James MAY m Grace TROLIP (sic) 5 Apr 1802, Trowbridge Wiltshire.
A James MAY and a Grace had a son Frederick James MAY bap 5 Aug 1802, died 4 May 1803 Trowbridge Wiltshire.
Have you looked at the entries in the Parish Register for these events just in case they provide a clue?
Films of parish registers can be ordered in to your nearest LDS Family History centre for a small charge.
Did James and/or Grace migrate to NSW?

I presume you are quite sure that a Thomas MAY is your ancestor?
What certificates do you have for him? What information is on them?
Where did the idea that your Thomas MAY was a son of a James MAY & a Grace TROLLOPE come from? And where did the idea that Thomas was the son a James MAY who was a convict come from?
