Your best plan is to find Sarah's burial as by that time her age should have been recorded. Age at death is not always 100 percent accurate but it will be indicative of when she was born.

This is probably a red herring but there is a submitted record on the IGI for a Henry Chapman and a wife called Sarah who have a daughter, Catherine, baptised on 25 Dec 1780 at St Mary's in Huntingdon.

I've checked both Ryton and Whickham and there is no appropriate marriage in either, so you may have to seek further afield for it. Certainly worth a look at the Huntingdon records though, or at least posting on that board to see if anyone can help.
