The 1861 for James, the original image may prove to show he was 27 at the time, not 29.

Thanks so much for the information. I knew of 1841, 1851 and 1861 census information for the William Easson family. But I could not locate James beyond his birth and marriage. The list of the children and 1861 census information for James is very, very helpful and exactly what I was looking for. ......
Thanks again for the information you sent me... I don't know where you got it ?? Do you have any further information about the marriage/census/deaths of the children of James Esson and Barbara Wallce? I was able to find info on Archibald (the eldest) but not much (other than census) on the other children.
James and Barbara & all children on 1871 - this is the last Census with the entire family all together (except Elizabeth the dau b abt 1860 - yet to discover what became of her after 1861)

Also search, view and download/purchase Census - but one has to be careful of this as you can easily spend a lot trying unsuccesfully to locate someone  http://www.scotlandspeople.gov.uk/

1881 - 1901 Mary, the eldest daughter - as Mary ESSON, married a man named James MELVIN in 1879 St Nicholas, Aberdeen. Free-Index Search of Scotlands People ( going by names of her children, guessed his first name was either George, Norman or James - and James it is. Though documentation would be needed to prove, am sure this is your Mary).
This is Mary in 1881, 1891, 1901....

Can't be 100 sure without seeing the original image on SP (to see if he is listed as married, and Mary too) but think James MELVIN was on the night-shift at work on 1881 Census night, and is listed here:
1881: Harron - Cruden, Aberdeenshire 185, ED 5, HS 101 Servant: James MELVIN 24, Baker, b St Nicholas Aberdeen He is a Servant to James DANIEL, also a Baker.
James MELVIN died in 1885 - SP WIlls Index James MELVIN, Baker, resident Mannofield, Aberdeen, died 21 Sep 1885 at Mannofield, He was Intestate. Spouse of Mrs Mary ESSON or MELVIN. Proved in Aberdeen Sheriff Court 12 Oct 1885.
Cannot see a death 1881-1891 in Aberdeen for James - but there is one to match, registered in Kincardine: James MELVIN age 28, died 1885, Kincardine (Note) Son Norman MELVIN's birth was registered 1885 in Kincardine, too)
His widow was in Kincardine in 1891: 1891: Banchory Devenick, Cults, Kincardineshire 251/3, ED 1, HS 34 Head: Mary MELVIN 33, Baker, b Aberdeen Son: James MELVIN 10, Scholar, b Aberdeen Dau: Barbara MELVIN 9, Scholar, b Aberdeen Son: George MELVIN 6, Scholar, b Aberdeen Son: Norman MELVIN 5, Scholar, b Aberdeen Servant: Annie CLARK 31, General Domestic Servant, b Aberdeen (son William age 8, is with Mary's parents in 1891)
Mary MELVIN remarried to James CUMMING, 1894 Old Machar, Aberdeen (SP Index)
