This is a strange one .. I can't find Gent on any census other than the 1871 .. if it isn't a silly question how did you find out Sarah's previous surname was Able .. ?
To answer my own query I expect it was on the birth certificate of one of their children .. ?

ill try to explain , sarah and gent had children and rosetta fuller married a paston, in 1881 rosetta was in the workhouse because her mum was in prison and the dad had disappeared, then in 1891 she is living with her grandfather william able. ok so we know rosetta is a fuller because of gent but sarah would of been an able. gent died in 1890 in northampton. i have rosetta and thomas paston marriage certificate and she has, father, gent cole fuller.
im trying to find out at the min why sarah went to prison but a visit to the norwich records office is the only way and i live abroad, but i think she went to prison and gent did a runner to northampton.

The only thing I've managed to come up with so far are the 1841 census results for Gent .. when I said I could only find him in 1871 you didn't say you have him on any other returns either .. so fingers crossed .. !
I'm sure you must have access to Ancestry or an equivalent, but by posting the details at the moment anything is better than nothing .. !
1841 census: HO107/778/24, Folio 19, Page 11
Norfolk, Scarning
John Fuller, 45, Wheelwright Sarah, 35 James, 15, Wheelwright Gent, 6 Charlotte Dunne ?, 12
All born in county.

Still living with his parents in 1851 to try and build a picture .. same occupation as in 1871 .. !
1851 census: HO107/1815, Folio 396, Page 40
Norfolk, St Peter Mancroft 28 Starland? Place
John Fuller, h. mar, 53, Coachmaker, b. Norfolk, Hineham Sarah, wife, 45, b. Norfolk Gent, son, unm, Coachmaker App, b. Norfolk, Scarning
I'm afraid I'm struggling to read the places of birth for John and Sarah .. the writing isn't too clear .. ?

I was hoping that by building up to 1861 I might be able to find the first Sarah and Gent as a married couple .. so far nothing at all .. ?
The other couple who married on the same page in 1860, do appear together in 1861 .. so it definitely was Sarah Norton he appears to have married .. ?

Is the reason you think that Sarah was nee Able because of her grandfathers name?
He could have been her Maternal Grandfather or she could have been a widow when she married!
