There is another possible reason for the lack of a father's name on a marriage certificate. If it was a church wedding it's a good idea to check the church register for other marriages around the same time. This is because some clergy were better at register-keeping than others. I have found a number of registers where the father's name is omitted on many entries, which can only be down to the person writing up the register (or else the parish is a hotbed of illegitimacy!).
It's always a good idea to look at the original register if you can, in case there are discrepancies between it and the copies that were sent to the GRO, and sometimes you will pick up nice details like other family weddings at the same church, or even double weddings. If it was a register office wedding you can't do this, but you would normally expect the registrar to be more accurate in the first place!
