Per freebmd - a copy of the birth cert will give his parents names
Jonathan Finch March qtr 1847 Manchester Volume: 20 Page: 828
A large part of the Manchester 1851 was water damaged during storage which may be why you cannot find them on the 1851 census
Some parts have been restored and are on CD

There doesn't seem to be anybody named Finch in Kendal in 1841, but there are Cunninghams, so it may be that only Elizabeth and Jonathan's mother was from Kendal.

has a marriage at St Mary, Prestwich of Thomas Finch and Mary Cunningham in 1844.
Some of the Manchester census books for 1851 are water damaged, and aren't available on Ancestry, which may be why this family are hard to find. I'm not sure where it is possible to view these census books, but if you ask on the Lancashire board someone may be able to help.
IGI has these baptisms of children born to Thomas and Mary Finch;

Most seems to match the Jonathon on 1861 age fits with John 1851
Will look for Thomas and Mary FINCH on 1861 parents of Elizabeth and Jonathon.

Tried to find Thomas Finch and Mary (Cunningham) on 1861 but Ancestry not playing ball.
Yes I would think that Husband living/working elsewhere but contributing to her upkeep.

Hi Tracy,
Further to the above info, I would agree that a birth certificate for her daughter Mary would not only give you the name of Elizabeth's husband, but also her maiden name (unlikely to be Cunningham). You could then research the IGI for Kendal under the correct surname.
