If you google "1831 census" and select the hit for the National Archive you will see from the National Archive website that the censuses before 1841 recorded only totals of people and not names

No it just means that there are no census (with names) before 1841.
If you believe that they lived in Royston you can search the parish registers for that parish for baptisms, marriages and burials. Those registers are held at Hertfordshire Record Office (according to their website). Because Royston is in Hertfordshire you may want to put a message on the Herts message board.
The Herts Record Office gives a chance for a free search of the names online. You may be lucky Cheesy

The online name search available at Hertfordshire Record Office website seems to be confined only to marriage entries in parish registers but if you search the name Moulden or Moulding you get lots of hits which may fit the people you search for
