I'm seeking info about Lawrence O'Hay born 1833 in county Meath and married 1865 to Catherine Day, died 1893 in Easton, PA USA.

Until you get a location in Ireland (townland or at least parish) you won't be able to trace many records in Ireland. Once you have a place you can start searching for church records, etc.

there are Co. Meath parish records on the Irish Family History Foundation website but nothing close to a match for the name 'Lawrence O'Hay'. There are just two results within 4 years of 1833 - they are
Hay James 1831 Heay Joan 1832
I cannot see any O Hey, or Hey records with a first name beginning with L in Co. Meath. Quite a few of the parish records start after that date so if the birth was in one of these it may not be included. The other possibility is that the surname has been mis-transcribed or misheard somewhere between leaving Meath and settling in the US.

I'm starting to wonder if the info I have, on the USA side, regarding the place where Lawrence was born is correct. In all the the surname searches i have done in county Meath, the surname of O'Hay does not appear.
Any ideas ?

the closest name that I can see is O'Hea - and the vast majority of these are located in Co. Cork, nearly 60 with 1 in Co. Armagh Im using Griffiths valuation entries to get a rough count - see the free site at : http://griffiths.askaboutireland.ie/gv4/gv_family_search_form.php
O'Hay gives no results anywhere in Ireland and O'Hey returns just one entry in Co. Limerick, it may also be worth trying other variations such as O'Hare ..
(Griffiths is a land valuation survey carried out in the mid 19 century)
without some additional clue it will be very difficult to start a meaningful search for Lawrence. Do you have any other clues ? e.g. father's name or occupation, a family trade , a vague place name - mountain, river, landlord or estate etc... sometimes a little clue can help narrow things down.
