Is there any particular reason why you want a birth cert for the children as listed? This would not give you a great deal of additional information. You could seek Sarah's birth cert as it will be registered after 1837, when Civil Registration came in.
I had a look on http://freebmd.rootsweb.com/cgi/search.pl to see if I could find Sarah, but she wasn't there under Goaches or Goacher. You could try looking for the children on this site. This site does not list EVERY birth, death or marriage - but it is a massive index, growing almost day by day.
If you find one that looks to be in the right year / location, there is a reference number beside it. This is the Volume Number and Page which, together with the location of the registration and the name is the information you need to order a birth certificate. Click on the name of the reg area in red and it will tell you where the records are kept. You then write or phone the registrar's office with the details and send a cheque for £7 for each certificate. If you ring them they will tell you what to do. Most local offices take less than a week to process your order.
You can also order from the Government Records Office (GRO), for the same fee, but they are currently very much slower in procesing - typically over 3 weeks.

It may be worth getting the certificate for that reason, but what I did for the 1871 census was search for any Sarah's born in Greenhill in 1838/39/40 and the only one that popped up was the Knowles one, which of course matches your marriage details. What information do you have about the marriage - when / where / fathers? Is this where you got the Goaches/Goacher information?
Why not try a post on the Nottinghamshire Look Up section of Rootschat to see if anyone can find Sarah and Elizabeth in Greenhill in 1861 or 1851? That might help.

Its probably best to unpick this bit by bit. But first, about freebmd - it does get very busy I'm afraid, but I usually find that if I keep clicking on the 'find' button you get through in the end. You need as a minimum to put a surname and first name in, and then narrow the search down by years. I don;t usually bother clicking 'districts', but if I know the county I select that. Worth perservering with!
Now, I can't find a Greenhill Nottinghamshire on a current map or on a list of parishes, but there's a Greenhillocks in Derbyshire and a Greenhill in Leicestershire. I think its more likely to be the latter.
From the 1871 census, Thomas is shown born Oldcotes. This is not far from Blythe, or from Hodsock, where he is living with Sarah. So this is fairly certainly 'your' Thomas and Sarah.
Looking for Elizabeth is trickier. She is probably married by 1871. In fact, there is only one Elizabeth of near age (33) listed as being born Greenhill in 1871: married to a Thomas Spencer. I had a search for marriages of Thomas Spencers but the two that came up had no Goaches/Goacher connection. It might be best to leave Elizabeth to one side - she may not even have been Sarah's sister.
However, some info from the 1881: Sarah (aged 43) gives her place of birth as Norton, Woodsetts - not sure where this is. 
Now some good news! 
freebmd has a birth registered for William Knowles in the December Quarter of 1859 in Worksop (which is the registration district for Hodsock, where he is shown as having been born in the 1871 census) - Volume 7b Page 33.

If you contact them with the above details, they will tell you if they have that volume there, and how to go about ordering a certificate.
Haven't had much joy searching for a Thomas Knowles marriage to a Sarah.
Looks like the birth cert route is your best best at the moment (as you had already gathered!).

A good initial source for where things are is the Ordnance Surveys 'Get-A-Map' site (free to use)
http://www.ordnancesurvey.co.uk/oswebsite/getamap/
Try a google search for 'Nottinghamshire GENUKI', and it should find a site with old maps on for you.
Don't hesitate to keep posting new threads on Rootschat as you find more / need to know more!
