Hi,
There's quite a cluster of Symes in Dorset (Bridport, Allington, Swyre) at that period. Some of them have been captured at:

I see that there is a reference to Joseph Dyke Symes in a Brisbane paper of 1866 but I can't find him in the 1851 or 1861 UK census.
The 1855 directory has James Symes as a Bridport ropemaker: http://www.historicaldirectories.org/hd/pageviewer.asp?fn=0000bz0m.tif&dn=LUL19014tif&zoom=s

This could be both Josephs in 1841:
1841 HO107/294/9 Lyme Regis, Dorset Joseph Symes, 51, woolstapler, Yes (ie born in Dorset) Hannah Symes, 29, Yes Joseph Symes, 16, No John Symes, 7 William Symes, 4 Richard Symes, 2 Sarah Symes, 7 George Symes, 3m
If these are the right Josephs, then Joseph senior has married a second Hannah (there is a possible marriage to Hannah Fowler on IGI) as she wasn't born in 1819. (The 1819 marriage is a submitted entry).
Both Joseph and Hannah are in the 1851 and 1861 censuses, his birthplace being Bridport.
