It could be Castray.

I have googled Castray and find quite a few, some in Australia e.g.

http://cemindex.arkangles.com/cemetery-inscriptions.php?id=381&page=all
but they are much later.

Some in England e.g.

A Martha Castray b. c. 1848 in the English 1881 Census at http://www.workhouses.org.uk/index.html?AshtonUnderLyne/AshtonUnderLyne1881.shtml

and many on ancestry.com

I hope this proves helpful and not another dead-end.

I have just looking at some transcripts of parish baptisms from Tipperary R.C.Parish and the name Ardloman jumped out at me as I had been following the discussion about this place name. It would seem that you should be looking for your McGrath/Costrays in Tipperary parish records not in Thurles as you thought.
