Hi Carol,
I think that should be Morrisey.
There are no listings for Morriseit in Griffiths Valuation of Waterford 1848-51 but there are four listings for Morrisey.

Griffith Valuation was carried out in the 1850s for taxation purposes and only includes the head of household.
Since Mary was a child at the time you will not find an entry for her - just for her family, possibly her father.
These entries then give you more specific locations (townlands) to investigate further with parish records etc.

Think what confused you, Mary, was that you were asking for information on Mary Morrissey born 1845 and were then told about Griffith's Valuation without any explanation. Unfortunately civil registration of births in Ireland didn't start until 1864 so there will b no birth certificate for Mary. To find a church record of her baptism you need to know the family's religion and where they lived (parish if not actual townland) and then see if church records for that area (and for that period) exist.

Griffiths is used as a 'census substitute' as there are no surviving returns from that era. The oldest complete Irish census is 1901.
The results can provide clues to possible locations of connected families.
