Missing from 1841 Census - Hatfield Peverel

Please can someone help me find Harriet Ellis (nee Simmons/ Simmonds) who looks to be missing from the 1841 Census.  Her husband George Ellis is there @ Hatfield Peverel living with their son John and a servant Hannah but Harriet seems to be missing.  She was born c. 1790 (probably in Essex but don't know where).  She was definately alive as she is listed in 1851 and died in 1860.
