1861 Canton, Llandaff RG9/4038 folio 18 pg 29 Ann Miles head widow 51 shopkeeper b. Pembroke St Mary James Laye father widower 77 cottage gardener b. ?onthon Parish, Wolverhampton Staffordshire William Miles grand son 8 b. Cardiff from 1871 census, James would appear to be Large not Laye, and there is a likely marriage in Llandough juxta Cowbridge of Edmund Miles to Ann Large of St John's 5/6/1831.
Before we get too carried away, I think you should get Wiliiam Miles' marriage cert so you check out Ann's family. The marriage was june qtr 1872 and as Sarah was 11 on the 1881 census, she was born before the marriage and may not be the daughter of William, though he evidently brought her up.

Hello again
I have just received the marriage certificate for William Edmund Miles and Ann Williams. They were married at the Register Office in Cardiff on 22 June 1872. William's father is, of course, Llewllyn and Ann's is Henry Williams, Collier. If Sarah Jane was Ann's illegitimate daughter, then they may be on the 1871 census, perhaps living with Ann's parents? I have had a quick look but there are so many Henry Williams, Ann Williams and Sarah Williams. Maybe I will strike lucky!
