Help please re:- Richard and Sarah Latter

I have a birth certificate for Kate Latter 22April 1881 showing her parents as Richard Latter and Sarah Latter formerly Collins.
I am having trouble finding the real Richard and Sarah Latter.

I thought I had found them in 1881 census at Sharpes Farm, Capel, Kent. This is the place of birth given for Kate on her birth certificate, but she is not shown on the census.  I believe she was born a few weeks after the census took place.  So far so good.

Richard Latter was shown on the census as 50 years old and Sarah as 44 years old. 
They already had five children.  I did find it odd that Sarah was married in 1853, (aged 16) but didn't have her first child until she was 29.
Richard and Sarah are shown as being born in Tudeley, Kent and all their children except Kate, were born in Pembury, Kent.

I have now found another Richard Latter in the 1881 census.  He is aged 27 and his wife Jane is 29.
According to the census Richard, Jane and their children were born in Capel, Kent but their address is given as Marden, Kent.
Both Richard Latters are traction engine drivers.

Can anyone sort out the muddle for me please?

with regard to your statement that sarah/richard had their first child when sarah was 29
according to the 1861 census she already had 3 children with richard the eldest son also called richard was born in 1855.
if you want the census entries then i will post them here.

I had only looked on the 1881 census. Oops.

The first children must have grown up and left home by 1881.  Thanks.

This must mean that the other Richard Latter is Kate's elder brother who is married to Jane.
And has got the same trade as his father.

the other richard aged 27 in 1881 is probably richard and sarahs first born.
do you want the census entries for the family?
