I got Thomas's birthplace from the 1851 census and the birth date from there also. However, looking again at the original document the 57 age given could be 51, which would make his birth 1800.
I have also just got the 1841 original census document, and this gives him as 40 years of age which would make the above assumption correct, but 1801 birth.
This also gives Susannah's age as 30, making her birth date 1811 which I am sure is wrong. I have birth date and location from her parents data which is the same as you have stated in your post.
The marriage date I got from Family Search plus other sources.
You have not looked up the data prior for me, I certainly would appreciate your assistance on this. It is the biggest brick wall I have had yet.
I have been thinking a holiday to the UK would be in order to chase some of these things up, and to look at where my ancestors originated.

I looked up the marriage entry in the Burton Pidsea PRs today -
June 6 1826 Thomas Carter of this parish, bachelor & Susannah Hodge of this parish, spinster.
They married by banns; both made their mark. Witnesses: William Carter, William Brown.
Not too much help - as you're probably aware, 'of this parish' doesn't necessarily mean either of them were actually born there.
The witness, William Carter might possibly be his father, but I suppose might be a brother. 
I did also double check the Sigglesthorne PRs for any Carter baptisms in case they'd been inexplicably missed off the IGI, but didn't find any. Either they didn't believe in baptising their children; baptised them in a nearby parish which isn't on the IGI; or were nonconformists!!
The best I can come up with from the IGI is a Thomas Carter s/o William & Elizabeth baptised at St Mary's, Hull on 21 May 1797. Hull is only about 10 miles from Burton Pidsea.
