The 1881 census has Nicholas Bailey, born Dublin Ireland in 1835, retired Tavern Keeper living with his son also called Nicholas Bailey, born Ireland in 1862, watchmaker at 41 Toxteth Street, Toxteth Park.
In 1891 census Nicholas senior is visiting the Hamlet family at 31 Heath Street, Mount Pleasant.
I also believe that either the father or son was witness at the marriage of John William Burns and Grace Wilberforce at Toxteth Park in 1897.
Can anyone find them before 1881? Was Ireland part of earlier censuses?

I can't help you I'm sorry with the census, but no Ireland was not part of the census with England and what's more, their census before 1901 were destroyed by fire. It's not easy when you start in that direction I can tell you. The best I've got is looking at siblings, wills, marriage witnesses over here until I got a clue to the area. They have great Rootschat boards.
That only leaves 1871 over here, looking at the son's birth.
I've also had some good clues from grave papers and RC records if they were RC Irish as there is more information - godparents are given.

I'm at a brick wall with my family before 1891 and as you suggest, I'm looking at any names I can find on marriage & birth certificates.
I'm now trying to trace the Hamlet family back (Nicolas Bailey was visiting them on the 1891 census) to see if our families join.
Do you belief that "visitor" on the census meant that they were a friend / family member or that they were a passing stranger who paid for a bed for the night? From my own experiences, I know that a large family gathering people were put up with neighbours / strangers and anywhere else they could find a bed.

Just a further update -
The Irish censuses for 1901 and 1911 are coming on line - AND THEY ARE FREE! Have a look at the partially completed 1911 one

It's a tragedy that the earlier ones were lost, but at least it's a step forward.
