Hi and welcome to the forum.
With such specific information that you have for his birth, I can't imagine that you don't have the 1901 census, but I'll post the details anyway in case they help.
Phoenix Street, Cowpen, Northumberland George Stevens Head M 35 Coal Miner (stoneworker) Kent Dover Emiliy Wife M 30 Northumberland Newcastle George H son 11 " " Janet daur 9 " Blyth Joseph F son 5 " Newsham John W son 3 " " Emily daur 1 " " RG13; Piece: 4813; Folio: 132; Page: 4
The way to be certain of Edith's surname is from the birth certificate of one of their children.

A little snippet on 1901 census
Although the census puts the family in Cowpen, it means that they were within the Civil Parish of Cowpen ( Cowpen today is part of Blyth)
Phoenix St was/is within Newsham ( then within civil parish of Cowpen, now western part of Blyth.)
The New Delaval colliery ( sometimes known as Forster Pit) was very close to Phoenix St.
George son of George and Emily was registered as George Arthur in June Qtr 1899 within Newcastle Registration District.

I don't mean to be rude but I'm really curious. I'm married to one of the grandsons of James Maughan Stevens who was born in 1902 to George and Emily. I have Edith from Wigan in my records and the parents of George Stevens are listed as Thomas and Charlotte Ferris. the children of George and Emily are as follows: Emily Isabella Stevens m. Thomas McHugh Amelia Fergus Stevens m. Jake Jacobson Robert Stevens m. Elizabeth Charlotte Stevens d. at birth Thomas Stevens m. Alice Bates John William Stevens m. Edith Joseph Fergus Stevens m. Georgina Lewis Joseph Stevens d. aged 13 months Janet Stevens m. Jack Bates George Henry Stevens m. Sarah Dingwall (he was killed in WW1) James Maughan Stevens m. Elsie Seddon Are you related? Adele Stevens, Winnipeg I am the son of Emily Isabella Stevens and Thomas McHugh. They had seven children. Emily who married a Thomas Wilkie and had four children. Emily and husband now deceased. Thomas McHugh jnr. who died in York Military Hospital in 1945. One of the Wilkie family is doing an extensive family tree and I can get any info from him if you want it.
