Now if a great uncle had been a postman in County Cavan, how would I go about researching that?  Who would have records of that?

Sorry for the delay in replying. If your ancestor worked as a Post Office employee in Co. Cavan prior to the 1920s, when the Irish Free State was formed, try the Family history of Post Office employees site. Alternatively pay a  visit the British Postal Museum & Archive (BPMA) - Freeling House Phoenix Place - London WC1X 0DL

Thanks for your earlier reply. My great uncle was a postman after the Irish Free State was formed, up into the 1960s I believe. I guess I would look into the Irish Postal system then.
