I'm trying to find out more about Elizabeth Stone born Portland Dorset in about 1818.  Married John Dredge in approx. 1837.

Have you looked at the various records available on the Dorset OPC site?

http://www.opcdorset.com

The Portland page has some census records as well as baptisms, marriages and burials, mostly St George's but some for 2 other churches and a chapel.  There are also some Wills and MIs, directories, etc.

DREDGE, Elizabeth 25 born outside Wiltshire   
DREDGE, James 2 born outside Wiltshire       
DREDGE, Harry 9 months born outside Wiltshire         

There are also Census records for 1851, 1861, and 1871 which show John and Elizabeth living at Britford, Wilts but I cannot find either of them in later censuses.

Britford was in the Alderbury, Wilts registration district and on FreeBMD there is this possible death record for John Dredge:

Deaths 2Q 1877   
Alderbury  Vol. 5a Page 130 
Dredge, John
Age 60 (therefore born 1816 or 1817)

And this possible death record for Elizabeth:

Deaths 2Q 1878   
Alderbury  Vol. 5a Page 131
Dredge, Elizabeth 
Age 63 (therefore born 1814 or 1815)

If this is “your” Elizabeth the following Portland Baptisms (from both the IGI and Dorset OPC) may be worth investigating further:

Name:  Elizabeth STONE 
Parents: dau of John & Elizabeth Stone
Abode: Weston
Father’s Trade or Profession: Taylor (Tailor)

Date: 17 Jul 1814
Name:  Elizabeth STONE 
Parents: dau of Robert & Grace Stone
Abode: Easton
Father’s Trade or Profession: Quarryman
