In case you are curious, these are the entries I found for Grimes christenings, Ashby-de-la-Zouch, 1814-1872, FHS ref 0883942:
Mary, chr. 9 oct 1814, d. of Thomas Grimes and Ann William, chr. 29 Sep 1816, s. of Thomas Grimes and Ann Lucy Ann, chr. 20 Sep 1818, d. of Thomas Grimes and Ann (death or burial 30 Apr 1820) Priscilla, chr. 1 Apr 1823, d. of Thomas Grimes and Sarah Ann, chr. 12 Jun 1829, d. of John Grimes and Mary Hastings, chr. 10 Sep 1843, s. of Priscilla Grimes.

I would say going on the above information on Priscilla….. Along with the more true age from her Burial Record Aged. 24. ( Born 1822) Plus that of the Census returns for 1841. Were Priscilla was down as age 15. But actual aged would have been 19.
( remembering my directions to you….. re ages on the 1841 Census returns Were….Anyone over the age of 15 was rounded DOWN to the nearest multiple of 5)
Then I would say Priscilla belongs to Thomas Sarah…..

Thanks for your reply. 
I agree with your conclusion: Priscilla belonging to Thomas & Sarah...
But what I was wondering, was: is Thomas' marriage to Sarah his second? Priscilla was christened just short of a year after the burial of my ancestor Ann Grimes, and Thomas' age given on the 1841/1851 with wife Sarah matches age given at marriage with Ann and his death/burial (more or less), so I thought there was a chance it was my ancestor Thomas in a second marriage... 
In any case, no worries, just a thought

The details of your findings are very interesting! As another wise RootsChatter once told me "it's all guesswork in the end", but nonetheless the more detail the better! 
I will draw my own conclusions, but as the registers indicate the marriage date a few months after Ann (Goodman) Grimes' death, the common occupation of the father, and Priscilla in the same Cemetary, etc... 
I am asking this post to be moved as I feel I have mayhaps extrapolated a bit much, and corresponding with you has been so pleasant...
