Where would I find where the 1849 German vinedressers families from the ship Beaulah were sent to work or there work records?

I am not sure about work records but there is some information available on the internet.

See:"http://www.teachers.ash.org.au/dnutting/germanaustralia/e/nsw-setl.htm" for example. That page mentions people from the Beulah.

The book 'Greetings from the Land where Milk and Honey flows' may also be of use if you can find a copy. Most large family history libraries would hold a copy. Hope this helps get you started. Don't overlook naturalisation certificates which may hold clues also.
