Cook Shops?

I've been digging a few distant cousins and found one branch in Wingate.

In 1901, Frances Donbavand is living with her brother Henry in Lake View. She is descibed as a Cook, working at home on her own account. RG13; Piece: 4687; Folio: 106; Page: 9 is the reference.

In Lancashire, there existed what were called "Cook Shops", where someone would cook, in their own home, quantities of hot food on a take-away basis for the mid-day meal. There would be two or three main meals, such as Hotpot or Shepherd's Pie, which would be served onto customers' own dishes. There would also be a couple of traditional puddings. The main customers would be mill workers.

It looks like my relative's business was something similar.

Were they common in Co. Durham too? What sort of clientelle would they have served? Did they have a more local name?
